The 5 typical dishes of Jalisco

Without a doubt the Mexican gastronomy is one of the richest in the world but the state of Jalisco is characterized by having an extremely varied cuisine in terms of colors, aromas and flavors, then we share 5 typical dishes that you cannot miss on your next visit to the beautiful state of Jalisco.

1.-Meat in its juice

This delicious dish created in 1967 and one of the most representative of the state, this echo of pieces of roasted beef in its own juice, which is served with beans and small strips of bacon and with a little onion and chopped cilantro, is usually served in a clay dish accompanied by handmade tortillas and a delicious guacamole that is part of the gastronomy of Jalisco.

2.-Goat Birria

This delicacy is one of the most traditional in the beautiful state of Jalisco and is offered within the menu of different restaurants. The traditional meat for its elaboration is that of goat but also frequently used that of sheep and beef. Its elaboration consists of bathing the goat meat in a sauce based on chili, dressings and various species, this is wrapped in maguey leaves and put in mud basins inside a hole for its traditional cooking on hot volcanic stones.  The broth that results from this process is extremely delicious and is served as a sauce to accompany it.

3.-Pozole Jalisco style

Pozole is one of the typical dishes of Jalisco and its creation dates back long before the arrival of the Spaniards in the region. It is a rich broth with corn kernels called peanuts originally from Mexico, with pieces of pork or chicken meat and what gives it its well-known Jalisco touch is its red color made from guajillo chile and is served with chopped lettuce, radishes and a Mexican sauce or pico de gallo.

4.-Drowned cake

You could not miss a classic of tapatía cuisine spread throughout Jalisco and Mexico, the drowned cake. Its elaboration is with salted birote bread, originally from Jalisco, it is filled with Jalisco-style carnitas and is immersed in a sauce based on Yahualica tree chili that gives it its original flavor, accompanied by bysflemada onion and golden potato or bean tacos.

5.-Jericalla

To this list comes a food well known by the Tapatia families and dating from the eighteenth century to the present day. It is the jericalla that although it is not a dish as such if it is a characteristic dessert of the western zone of Mexico. As a result of the culinary miscegenation, it mixes Mexican and European ingredients such as milk, sugar, vanilla, eggs and cinnamon and that when whisking and baking results in a delicious flan flavor.
